INGREDIENTS
FOR CUPCAKES
All-purpose flour 3/4 cup
Castor sugar 1/2 cup
Vanilla extract 1/4 teaspoon
Egg 1 large
Milk 1/4 cup
Butter 1/4 cup
Red food color 1/4 teaspoon
Green food color 1/4 teaspoon
Baking powder 1/2 teaspoon
FOR CAKE
All-purpose flour 1&1/2 cup
Baking powder 1 teaspoon
Castor sugar 3/4 cup
Milk 1/2 cup
Eggs 3
Vanilla extract 1/2 teaspoon
Butter 3/4 cup
Cake tin 6 inches
FOR ICING
Cream cheese 6 tablespoonful
Butter 3 tablespoonful
Castor sugar 5 tablespoonful
Vanilla extract 3 drops
Desiccated coconut 3 tablespoons
Chocolate chips 3 tablespoons
METHOD
For Cupcakes

Preheat oven at 1600c, at gas mark3
for10 minutes.

Sieve together all the dry ingredients such as
all-purpose flour, castor sugar and baking powder and mix them well
·
Now add in it vanilla extract, butter, egg and
milk, beat well.
·
Divide into two portions, add green color in one
and red color in another, and mix well to have a uniform color distribution throughout
the batter.
·
Grease the cupcake tray.
·
Transfer to the baking cupcake tray.
·
Bake for
25-30 minutes.
·
Check with the skewer, if it comes out clean
means it is ready.
·
Take them out, allow them to cool and cut them
to half.
For cake
·
Sieve together all the dry ingredients such as
all-purpose flour, castor sugar and baking powder and mix them well
·
Now add in it vanilla extract, butter, egg and
milk, beat well.
·
Take about 4 tablespoons of the batter in the
baking tin, and cover the bottom with the batter, add in it the colored
cupcakes, now fill the tin with the rest of the batter, tap it to the floor
four times so that the batter is distributed evenly.
·
Place it in the oven and bake for one hour at
16o0c at gas mark 3.
·
Check with the skewer, if it comes out clean;
allow the cake to cool, and even the top of the cake by cutting with a knife.
For Icing
·
Beat the butter, add in cream cheese, castor
sugar and vanilla extract beat till it is fluffy, cover this filling to the
entire cake.
·
With the extra cupcakes garnish or decorate them
as you like.
·
Sprinkle desiccated coconut and chocolate chips
on top. Serve and enjoy!
