Chicken Patties


INGREDIENTS
Chicken breast 1
Onion I medium sized
Milk 1 cup
Plain flour 2 tablespoons
Clarified butter 2 tablespoons
Salt 1 teaspoon
Black pepper powder 1 teaspoon
Egg 1
FOR PUFF PASTRY
Water 100 ml
Clarified butter 40 g
Plain flour 220 g
Salt 1/2 teaspoon
Lemon juice 4 drops
Butter 180 g
Extra butter needed to dust the surface

METHOD

FOR PUFF PASTRY
·         First of all mix salt and lemon juice to the flour, then add in 40 g of the butter, mix well.  Then to this add water as needed to make the dough of desired consistency and place it in the freezer for 10 minutes.
·         Also place the butter in the freezer to cool for about 24 hours.
·         Take the butter out, also sprinkle flour to the entire butter piece.
·         Dust the surface and rolling pin with the flour, roll the dough from the sides and place the butter in the center, cover it all around with the dough and seal the ends such that the butter may not ooze out.
·         Tap the dough with the rolling pin to even the dough bed then roll it with the rolling pin to the maximum size.
·         Fold it and keep it in the freezer for 15 minutes.
·         Take it out again tap it with rolling pin and roll with the pin to maximum  size, fold again and keep in the freezer for  15 minutes.
·         Repeat this procedure for 2 more times that are 4 times total.
·         Your puff pastry is ready.

NOTES
Puff pastry can be stored in the freezer for more than a month.
Keep the butter in the freezer for making puff pastry, once if it melted, it may ooze out and your pastry won’t be prepared.

FOR FILLING
·         Wash the chicken, and boil it in water and salt, cook till it is ready.
·         In a pan, add clarified butter and onion, cook the onion till it soft.
·         Dissolve flour in milk and add it in the pan containing onion, also add black pepper powder and salt in it.
·         Mix well, cook till the mixture is thick, and turn off the flame.
·         When chicken is ready, shred it and add it to the ready mixture and mix well.
·         Now cut the round pieces from the puff pastry apply egg wash, add the filling, cover with another layer and seal the ends, make small round depression on the top of the sandwich and apply egg wash.
·         Preheat oven at 1900C at gas mark 5 for 10 minutes.
·         Align the patties on the butter paper lined baking tray.

·         Place it in the oven for 25-30 minutes or until turn golden.
·         Serve hot and enjoy!
